Referring to the swatches enables you to check what your colours will look like when they're printed on coated or uncoated card. With the right book, you'll also be able to see how your colours will appear when they've been printed in CMYK. To access the pantone swatches in Illustrator, simply go to Window > Swatch Library > Colour Books.
